I GET EXCITED WHEN I SEE THE FIRST MANGOES OF THE SEASON APPEAR IN THE MARKETS. THIS RECIPE IS ONE OF THE FIRST MEALS I MAKE IN SUMMER. IT IS SO QUICK, EASY AND FRESH. EVERYONE WILL LOVE IT. IF YOU DON’T HAVE ANY LEFTOVER CHICKEN, BUY A COOKED CHOOK FROM THE SHOP.

- 4 handfuls mixed lettuce leaves
- 2 mangoes, sliced
- 600g cooked chicken, chopped
- ½ red onion, finely sliced
- 1 handful coriander, chopped
- 2 tablespoons white condiment (white balsamic vinegar)
- 6 tablespoons olive oil
- 1 tablespoon honey
- ½ tablespoon wholegrain mustard
- Pinch of salt
1Arrange lettuce, mango, chicken, and red onion on a large salad platter or individual plates.
2To make dressing, shake ingredients in a jar until combined. Taste and adjust to your liking.
3Pour over salad, and sprinkle with coriander leaves.
