Waffles keep in the fridge for 3 days and freeze well up to 2 months when stored in airtight container.

Ingredients
- ยฝ cup flaxmeal
- 1 tsp baking powder
- 2 tsp cinnamon
- 1 Tbsp natvia sweetener
- 2 eggs
- 2 Tbsp butter, melted
- 2 tsp vanilla essence
- Cooking spray or extra melted butter to grease waffle maker
Method
- Preheat waffle maker.
- Place all dry ingredients in a medium bowl then whisk through remaining wetย ingredients.
- Grease waffle maker well with and ladle mixture onto hot plate (adjust amount according to size of waffle maker).
- Close lid and cook until browned and crisp.
- Remove and repeat with remaining batter until all waffles are cooked.
- Serve waffles topped with whipped cream/coconut cream, warmed berries and a drizzle of melted dark chocolate.
