Choc jam marshmallow bites

Prep time: 15 minutes
Serves: 20 (40 pieces approx, 2 per serve)

These bites are a delicious after-dinner treat, especially when topped with lots of grated dark chocolate. Really easy to make and they store well in the fridge for up to a week, not that ours ever last that long!

Ingredients
  • 400ml water
  • 100g natvia sweetener (or similar granulated sweetener)
  • 60g gelatin powder (grass-fed and organic if possible)
  • 2 tsp vanilla essence
  • Optional: 1-2 tbsp. collagen powder, protein powder or MCT powder
  • ¼ cup sugar-free berry jam (available in supermarkets or recipe on my website)
  • Dark chocolate (min. 70% cocoa), grated
Method

Line a baking dish or slice tray (approx. 26  x 16cm) with plastic wrap.

  1. Place 200ml of water and sweetener in a small saucepan and stir over medium heat until dissolved.
  2. Place remaining 200ml water in a cup and stir through gelatin to bloom (ie. gelatin will become firm).
  3. Add bloomed gelatin to saucepan and keep stirring with a spatula or whisk until dissolved (should be just before boiling point).
  4. Pour hot mixture into a mixmaster and blend on high speed until mixture becomes white, thickened and glossy. Use whisk attachment if possible for a fast result otherwise normal beaters will work, just takes a few minutes longer to thicken.   
  5. Fold through vanilla essence and optional extras eg. collagen powder, MCT powder.
  6. Pour mixture into lined baking tray and place in fridge for 10 minutes until firm. Remove and slice into squares.
  7. Place a small dollop of sugar-free jam on top of each piece and grate dark chocolate over the top.
  8. Store in airtight container in fridge.

After experiencing health problems three years ago, Linda changed to a low-sugar real food diet and was amazed at the results. Over a six month period, she easily lost 15kg of stubborn weight that she’d struggled with for decades, her energy levels improved to an all-time high and her mental clarity returned in abundance.  Her husband joined her on this mission and also lost 20kg easily in 6 months and felt fantastic.  One of the keys to their success was not feeling deprived of their favourite foods, especially cupcakes and porridge.  

Linda launched her business “Simply Swap Foods” in November 2020 to help others on their journey to a healthier way of life. She loves sharing her recipes, story and knowledge about the benefits of reducing sugar and just eating real food. All Linda has done – with time and research – is ‘simply swapped’ some foods in her diet and she hopes to show others just how easy it can be and how fantastic you can feel. No Food Shaming.

If you grew up in the ‘80s, ‘90s, or early 2000’s, chances are you were taught to see food through a moral lens: veggies were “good,” chocolate was “bad,” and fat was something to fear. That messaging stuck.

So now, when you reach for a bag of chips after a long day or say yes to dessert, a quiet voice in the back of your mind is likely to whisper: “You shouldn’t.” You feel like you’ve done something wrong – simply for eating something you enjoy. And here’s the thing: our kids are watching. They’re listening. The way we talk about food becomes the way they relate to it.

If you want to raise confident eaters, it’s time to let go of the “good” vs “bad” food narrative and allow your kids to enjoy food without guilt or shame. Let’s be real; some foods are more nutrient-dense than others. But that doesn’t mean that we need to rank them on a scale. Instead of calling food “good” or “bad”, try talking about how it fits into the bigger picture of what our bodies need.
