Such a delicious dessert, these waffles really hit the spot when topped with cream/coconut cream, berries and a drizzle of melted dark chocolate. You can make waffles as large or small as you like and don’t worry if you haven’t got a waffle maker as you can cook the batter in a frypan for delicious choc chia pancakes. Enjoy!
Preparation time: 5 minutes | Servings: 4 waffles (approx 15cm diameter)
Ingredients
- 1 pack Simply Swap Foods Low Carb Pancake Mix
- 1 tblsp raw cacao powder
- 1 tblsp Lakanto Classic monkfruit sweetener
- 1 tsp cinnamon
- ½ tsp baking powder
- 2 tblsp melted butter (or ghee or coconut oil)
- 2 extra-large eggs, beaten
- ¼ cup preferred milk
- (Cooking spray or extra melted butter to grease waffle maker)
- For serving:
- Dark chocolate, melted (Lindt 70% or higher)
- Fresh berries (or defrost frozen berries)
- Whipped cream or coconut cream
Method
- Preheat waffle maker.
- Pour contents of pancake mix in a medium size bowl,
add remaining dry ingredients and combine together well ensuring no lumps remain. - Add melted butter to dry mix along with beaten eggs and milk then whisk ingredients together until a batter forms.
- Grease waffle maker with cooking spray then spread approx. ⅓ cup mixture onto hot plate.
- Close lid and cook approximately for 3 – 5 minutes until firm and crisp.
- Remove and serve topped with fresh berries, whipped cream or coconut cream and melted dark chocolate (melt chocolate by breaking into pieces and placing in microwave safe bowl on high for 1 minute. Remove and stir. If not fully melted, microwave further 30 seconds at a time if needed).
