Sarah Glover’s ANZAC Smores gone wild

Makes: 16 cookies

Ingredients:

  • 1¼ cups (110g) rolled oats
  • 1¼ cups (110g) desiccated coconut
  • 1 cup (150g) plain flour
  • 150g unsalted butter
  • ¼ cup (90g) golden syrup
  • 1 cup (220g) raw sugar
  • ½ tsp bicarbonate of soda
  • 1 cup vanilla marshmallows sliced into three round discs 1 block of chocolate broken into pieces

Method:

Preheat your Traeger Grill (using cherry wood) or oven to 180°C.

Combine the oats, coconut, flour and a pinch of salt in a bowl. Set aside. Place the butter, golden syrup and sugar in a saucepan over medium heat, stirring until butter melts. Bring to a simmer and cook for a further 1-2 minutes until sugar dissolves. Remove from heat, cool slightly, then add the bicarb soda and 1 tbsp water. Stir to combine, then pour over the oat mixture.

Using a wooden spoon, combine butter and oat mixture. Using 1 tbsp mixture each, roll into 16 equal-sized balls. Divide between two baking paper-lined baking trays, leaving 3cm between each.

Flatten biscuits slightly, then bake for 8 minutes until the top tray is slightly golden, add the discs of marshmallows on top with a few pieces of chocolate. Cook for a further 6-8 minutes until all biscuits are golden.

Remove from the grill and cool on a wire rack.

@protectwhatyoulove.com.au (PWYL) and @seadragonsearch (SDS) are hosting a community-led Seadragon Conservation Event on Sunday 1 March 2026 in the Portsea area from 9:00 am. The event will bring together divers, snorkellers, beach volunteers, scientists, and community partners for a coordinated ocean and beach clean-up aimed at reducing marine debris in key seadragon habitats. A representative from our collaborator 'Extreme Watersport' will provide a safety briefing and equipment for the beach clean-up.

We have reserved an area at the Rye Hotel Bar from 12:00 pm for lunch at leisure. Following this, participants will gather for a science presentation by Kade Mills, key Victorian SeadragonSearch team member, who will share the latest insights into seadragon conservation and explain how citizen scientists can contribute to ongoing research by submitting seadragon sightings and photographs. Presentation will take place at the Blue Water Room of the Rye Hotel at 13:00 pm.

The initiative aims to combine hands-on conservation action, citizen science, education, and community engagement, strengthening local collaboration to help protect Victoria’s iconic Weedy Seadragons and their habitats.

Air fryer banana doughnut bites! 
I saw this recipe on the Quick & Easy Air Fryer recipes page on Facebook and had to give it a try!
Results - 😋
3 small, ripe bananas
1 tsp vanilla
2C self raising flour
Mash bananas and add vanilla then flour. 
Shape into 15-ish balls. (Flouring hands helped with sticking!)
Into air fryer at 200C for 8-10 minutes flipping half way. 
Remove and brush with melted butter then roll in cinnamon sugar.

Air fryer banana doughnut bites! I saw this recipe on the Quick & Easy Air Fryer recipes page on Facebook and had to give it a try! Results - 😋 3 small, ripe bananas 1 tsp vanilla 2C self raising flour Mash bananas and add vanilla then flour. Shape into 15-ish balls. (Flouring hands helped with sticking!) Into air fryer at 200C for 8-10 minutes flipping half way.
