Stuffed Mushrooms

This dish is one of the first โ€œdinner styleโ€ meals I taught my kids to make. When they were young, I chopped the ingredients for them and put in bowls for them to assemble. Now theyโ€™re older, they can do everything themselves which is great as I get a night off cooking!

*Only 6g Net Carbs per serve

Prep time: 30 minutes
Serves: 4

Ingredients

  • 1kg medium to large mushroom cups (approx. 16, 4 per serve)
  • 350g cream cheese, softened
  • 200g bacon or ham, finely chopped
  • ยฝ cup spring onion green stalks, finely chopped
  • 200g tasty cheese, grated

Method

Preheat oven to 180ยฐC and place baking paper on a large baking trays.

  1. Wash or wipe mushrooms to clean and remove stalks (taking care not to break) then place mushrooms top side down on large baking trays.
  2. Break off small pieces of cream cheese and spread with a knife gently in mushroom cup taking care not to break the cup. Distribute cheese evenly among mushroom cups.
  3. Distribute chopped bacon evenly throughout all mushroom cups on top of cream cheese.
  4. Distribute chopped green onion evenly throughout all mushroom cups on top of bacon.
  5. Top with grated tasty cheese and press mixture down slightly in each mushroom cup.
  6. Bake for 30 – 40 minutes or until cheese is melted and golden brown.

The secret to success

One of the keys to success and staying motivated was continuing to enjoy their traditional favourite meals and desserts.ย  With delicious cakes and desserts still on the menu, there was no reason to seek out the unhealthy alternatives.ย  Linda spent time developing lots of recipes that are low in refined sugar and naturally lower in carbohydrates so your insulin levels remain steady and you donโ€™t feel hungry all the time.

So how many carbs should we eat*?

There are many factors to take into account when calculating your daily carb level however current research suggests between 20 to 50 grams per day is optimal for most people.ย  The average Australian consumes 300 grams per day with 120g of these carbohydrates coming straight from sugar. This equates to a crazy 30 teaspoons of sugar every day, often unknowingly through added sugars in processed food. Simply removing processed foods from your diet will drastically cut your overall carbohydrate intake and improve your health very quickly.

@protectwhatyoulove.com.au (PWYL) and @seadragonsearch (SDS) are hosting a community-led Seadragon Conservation Event on Sunday 1 March 2026 in the Portsea area from 9:00 am. The event will bring together divers, snorkellers, beach volunteers, scientists, and community partners for a coordinated ocean and beach clean-up aimed at reducing marine debris in key seadragon habitats. A representative from our collaborator 'Extreme Watersport' will provide a safety briefing and equipment for the beach clean-up.

We have reserved an area at the Rye Hotel Bar from 12:00 pm for lunch at leisure. Following this, participants will gather for a science presentation by Kade Mills, key Victorian SeadragonSearch team member, who will share the latest insights into seadragon conservation and explain how citizen scientists can contribute to ongoing research by submitting seadragon sightings and photographs. Presentation will take place at the Blue Water Room of the Rye Hotel at 13:00 pm.

The initiative aims to combine hands-on conservation action, citizen science, education, and community engagement, strengthening local collaboration to help protect Victoriaโ€™s iconic Weedy Seadragons and their habitats.

Air fryer banana doughnut bites! 
I saw this recipe on the Quick & Easy Air Fryer recipes page on Facebook and had to give it a try!
Results - ๐Ÿ˜‹
3 small, ripe bananas
1 tsp vanilla
2C self raising flour
Mash bananas and add vanilla then flour. 
Shape into 15-ish balls. (Flouring hands helped with sticking!)
Into air fryer at 200C for 8-10 minutes flipping half way. 
Remove and brush with melted butter then roll in cinnamon sugar.
