Great for the whole family or a yummy fast meal for one.
Prep time: 5 minutes
Cook time: 30 minutes
Total time: 35 minutes
Serves: 4
Ingredients:
- 10 eggs
- ½ cup milk or cream
- salt and pepper
- 6 bacon rashers, chopped
- 1 tablespoon olive oil
- 1 red onion, finely sliced
- 100 g cherry tomatoes
- 1 handful basil, chopped (optional)
- 30 g parmesan cheese, grated
Method:
Preheat oven to 200°C. Grease a 20cm × 20cm ovenproof dish.
Lightly whisk eggs, milk or cream, salt and pepper in a bowl or jug and put aside.
Heat frying pan over medium heat. Add bacon and cook for about 4 minutes until slightly crisp. Add oil if pan is dry and add the onion. Cook for 2–3 minutes, stirring until onion softens.
Combine onion, bacon, tomatoes and basil in prepared dish, pour egg mixture over the top, sprinkle with cheese and cook in oven for 30 minutes. To check if it is ready, give it a wobble or touch the top in the centre of the dish. If not set, give it another 5 minutes and check again.
Allow to rest for 10 minutes before cutting.

Try mixing 3 eggs with a splash of milk. Cook bacon and onion in a small frying pan then add remaining ingredients and top with eggs. Cook for 5 minutes on low heat, then to finish off the cooking, pop under the grill for another few minutes until set.
Make sure the handle on the frying pan is metal, and remember to use an oven mitt.
