Many supermarkets are now carrying “riced” cauliflower in the fresh food and frozen sections. Very simply, “riced” means that the vegetables are chopped up very finely to resemble the size of rice. You can do this quickly at home in a food processor or chop coarsely by hand for a chunkier style. A great accompaniment to any main meal, particularly stir-fries, casseroles or curries. I highly recommend using a quality stock powder such as the premium organic San Elk range – makes all the difference with this dish!
- 1 small onion, finely chopped
- 3 cloves garlic, crushed
- 600-800g cauliflower, riced
- ¼ cup water
- 2 tsp chicken stock powder (eg. San Elk brand)
- Salt to taste
- Shortening or preference for frying – butter, coconut oil, extra virgin olive oil, ghee, lard.
- Heat large fry pan or wok and use 2tbs of shortening to fry onion on high heat until soft.
- Add garlic to pan and stir through then add all other ingredients.
- Turn heat down to medium and turn mixture often with wooden spatula to cook.
- Once vegetables are tender and cooked, season to taste then serve.
You can have your cake and feel great too!

After changing to a low-sugar real food diet over 3 years ago and experiencing huge health improvements, Linda wanted to create some Australian-made products to help others on a similar journey. The biggest challenge she had at the start of changing to a low sugar eating style was finding an easy replacement for her beloved sweet treats, especially at family celebrations. Drawing on her background as a cookbook author and food writer, Linda spent many months in the kitchen fine-tuning the recipes that are used in these mixes. Please check out Linda’s website for more details and know that she’ll be doing a super happy dance every time someone places an order.
